Food University - Raise Your Culinary IQ This March
And it’s in Vegas.
“The event is designed to transform fun-loving foodies from across the country from spectators into competition-ready chefs in 72 hours,” says the press materials. In this vein, one of the final events is a team competition, Iron Chef-style, pairing students with guest chefs.
Food University at Caesars Palace is a collaboration between Caesars Palace, philanthropist Larry Ruvo, Food Network co-founder Robin Leach, and culinary entertainment producer Richard Gore. The faculty includes Vegas’ own James Beard Award-winning chef, Alex Stratta; cheese expert Laura Werlin; chef and TV personality Claudine Pepin; and Colman Andrews, editorial director of website The Daily Meal. Guest chefs include Food Network’s Ace of Cakes star Duff Goldman, Hell’s Kitchen season 10 winner Christina Wilson, renowned pastry chef François Payard, and chef/ restaurateur Frank Pellegrino, Jr. of legendary Italian eatery Rao’s. Other high-profile guest chefs are to be unveiled in coming weeks. The date for the first session is March 27-29, 2013.
The three day schedule is packed with classes on topics ranging from wine and cheese pairing to classic Italian cuisine to mixology. The detailed itinerary is available online and includes choices such as Knife Skills, Sauce Making, Wine 101, Seafood 101, Perfect Presentations and more. Unlike traditional food festivals, the small size allows the no more than 80 guests to rub elbows with their instructors, including chefs, sommeliers, fine food purveyors and even farmers. Visiting “scholars” will not merely eat, drink and learn, they will don chef whites and take a hands on approach to course work. In addition to the daytime classes there will be private, VIP “field seminars,” such as the Southern Wine and Spirits’ Hospitality Mixology program, normally available only to hotel and restaurant executives. In total each student will take nine hands-on cooking classes, three educational seminars, and two field trips.

Of course, the inaugural event will culminate in a festive commencement ceremony and each member of Food University’s first graduating class will receive an “Enlightened Palate” diploma.
